Acai Berry "Ice Cream" Bread - Gluten & Dairy Free

A gluten-, dairy-, & nut-free bread recipe that is healthy & tastes great!

Ingredients

  • 1 pint of Sambazon Acai Berry sorbet, softened
  • 2 c flour (I used gf all-purpose instead of a self-rising one, so I used 2 tsp baking powder + 1/2 tsp sea salt as part of the 2 cups)
  • 1/4 c coconut milk
  • 1 tbsp coconut sugar + 1/2 tsp of honey (I used a vegan "honey" made from apples; agave could be used as well)
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

Ingredients

Instructions

  1. Preheat oven to 350 F.
  2. Mix all ingredients together (make sure sorbet is very soft before mixing or it will be difficult to uniformly combine all ingredients to make a "dough") & pour into greased/sprayed loaf pan (the size of the loaf pan doesn't really matter that much because the bread will not rise much during the baking.
  3. Bake for 35-45 min, or until toothpick inserted in center comes out clean.
Note from Brianna, the Acai Berry "Ice Cream" Bread creator: The first time I tried making this I used matcha powder & I didn't really care for it too much - I definitely like using the cinnamon & nutmeg better. Feel free to play around with any spices or flavor combinations you want!   I hope anyone reading this wants to try the recipe out, because even though the bread comes out pretty short in stature and with a purplish color from the sorbet, I think it tastes great! It's soft & moist & sweet. Feel free to add any suggestions/tips, and let me know if you try it out! :)
