Antioxidant-Rich Acai "Ice Cream" Bowl

Ingredients

  • 2 bananas
  • 1 heaping cup frozen blueberries
  • 1 heaping cup frozen raspberries
  • 1 packet Sambazon unsweetened acai puree
  • 1 tbsp chia seeds
  • 1/3 cup unsweetened almond milk or coconut water
  • Handful few dried goji berries, golden berries, mulberries, and coconut flakes.
 

Ingredients

  • 2 bananas
  • 1 heaping cup frozen blueberries
  • 1 heaping cup frozen raspberries
  • 1 packet Sambazon unsweetened acai puree
  • 1 tbsp chia seeds
  • 1/3 cup unsweetened almond milk or coconut water
  • Handful few dried goji berries, golden berries, mulberries, and coconut flakes.
 

Instructions

  1. At least one hour before before pre-soak chia seeds in nut milk or coconut water (I use almond milk).  You can do this up to two days before, and let it sit in the fridge, for softer seeds.
  2. Blend bananas, blueberries, raspberries, and acai puree in high speed blender.
  3. Mix in chia "pudding", but do not blend it.
  4. Spoon into bowl and top with dried berries & coconut flakes.
