Balsamic Acai Glazed Carrots

There's nothing better than roasted, glazed organic carrots.

Ingredients

  • 1 lb small Carrots, greens trimmed
  • 1 ½ Tbsp Balsamic Vinegar
  • 1 ½ Tbsp Honey or Agave
  • 2 Tbsp Sambazon Original Juice
  • ¼ in fresh Ginger, chopped
  • Optional: fresh herbs like Thyme, Mint or Tarragon
  • Sea Salt and fresh Pepper to taste

  • 1 ½ Tbsp Honey or Agave
  • 2 Tbsp Sambazon Original Juice
  • ¼ in fresh Ginger, chopped

  • Sea Salt and fresh Pepper to taste

Instructions

  1. Preheat oven to 425 F
  2. Line a pan with parchment paper or prepare with olive oil.
  3. In a bowl, combine balsamic, honey and Sambazon.  In another larger bowl, toss carrots with dressing and chopped herbs.
  4. Lay carrots flat on pan, season with salt and pepper.
  5. Cook for about 15 minutes, rotate occasionally.  Carrots are done when slightly browned.
  6. To serve, drizzle more balsamic on top, add a few more sprinkles of herbs and maybe a little more salt and pepper to taste.  You did great.
