I've been paying around $10 for delicious acai bowls at a specialty health food café and thinking that these culinary masterpieces can't be that hard to make... and they aren't! This recipe combines bananas, acai, blueberries and coconut milk for a delicious smoothie bottom (sneaking in the greens and flax seed so you don't taste them). The top is just a tiny bit of granola, goji berries and honey with baby banana (it's little sweeter) so all in all, the end-product is beautiful, delicious and good for you!

Ingredients

BOTTOM SMOOTHIE PART
  • 1 packet frozen unsweetened Sambazon Acai
  • 1.5 regular organic bananas
  • 1/2 c frozen blueberries
  • 1 tablespoon flax seed
  • 1 handful of greens
  • 1/4 cup coconut milk
  • raw honey (a drizzle)
TOPPING
  • 1 baby banana
  • 2 tablespoons granola (I like the kind from Whole Foods that has a little dark chocolate in it)
  • raw honey (a drizzle)
  • 1 tablespoon goji berries

Ingredients

BOTTOM SMOOTHIE PART

  • 1.5 regular organic bananas
  • 1/2 c frozen blueberries
  • 1 tablespoon flax seed
  • 1 handful of greens
  • 1/4 cup coconut milk

Instructions

  1. Place a handful of greens in blender
  2. Chop 1.5 regular banana into chunks and place on top of greens
  3. Throw frozen blueberries on top
  4. Run acai under water for 5 seconds per package, then bend package a few times to break up into multiple icy pieces (makes it easier for use in blender) then throw on top of blueberries
  5. Sprinkle a tablespoon of flax seed around blender then drizzle a little honey on top of that
  6. Pour 1/4 cup coconut milk in and blend slow to start (If you're using a cheap blender like I am, it may get a little stuck but if you take a spatula and push down on the sides, it should start to blend up nicely)
  7. Pour your acai smoothie into bottom of bowl and top with 1 sliced baby banana, 2 tablespoons of granola and a tablespoon of goji berries
  8. Drizzle with honey and cry tears of joy after your first bite
