This fresh chilled soup tastes just like Spring.

Ingredients

Serves 2-4
  • 3 Tbsp Coconut Oil
  • 1 medium Carrot, diced
  • 1 medium Onion, diced
  • 1 medium Potato, diced
  • ½ tsp fresh Thyme
  • Sea Salt and Pepper to taste
  • 4 medium Zucchini, trimmed and diced
  • 2 medium ripe Pears, peeled, cored and diced
  • 3 cups Vegetable Stock or Water
  • 1 cup Sambazon Daily Cleanse
  • Mint Leaves
  • Kale, a few handfuls
  • Optional: Ginger or Turmeric

Instructions

  1. In a big pot, sauté carrot, onion, potato and thyme with salt and pepper over medium heat.  Stir every now and again until onion gets soft.  Maybe about 5 minutes.
  2. Add zucchini and continue to cook until that’s tender (about 10 MORE minutes).
  3. Now add pear and keep cooking until THAT’S all softened up.
  4. Add liquid (stock or water) and bring to a boil.
  5. Taste and re-season as needed.
  6. Let that cool. Now transfer to your Vitamix a bit at a time and blend up to smooth-town.
  7. Serve cold with a little mint and fresh kale floating on top.
