Easy vegan, gluten-free bread packed with veggies + fruit.

Ingredients

  • 3 Tbsp Chia Seeds
  • 3/4 cup Sambazon Original Juice
  • 1 c Carrot, shredded
  • 1 c Zucchini, shredded
  • 1 ripe Banana, smashed
  • ¾ c Sugar (or you can swap it out)
  • 3/4 c Apple Sauce (or you can use oil)
  • 2 tsp Vanilla Extract
  • 3 c Gluten Free Flour
  • 1 tsp Baking Soda
  • ¼ tsp Baking Powder
  • 2 Tbsp Coconut Flakes
  • 1 tsp Sea Salt
  • 2 ½ tsp Cinnamon

  • 2 Tbsp Coconut Flakes
  • 1 tsp Sea Salt
  • 2 ½ tsp Cinnamon

Instructions

  1. Preheat oven to 350 F
  2. Combine chia seeds and Sambazon in a bowl, stir and let hang out for 10 15 minutes.
  3. In a fairly large bowl, mix mashed banana, sugar, applesauce, and vanilla.  Groove it all together, then add shredded carrot and zucchini and stir it up again.
  4. In another bowl, add flour, baking soda, baking powder, coconut flakes, salt and cinnamon. Mix it all up.
  5. Stir flour into the wet mix.  Stir, stir, stir to get the lumps out, but don’t go crazy and over stir. Keep it cool.
  6. Divide into two prepared loaf pans (you can line with parchment paper).  Maybe sprinkle a little sugar and salt on top if you’re wild.
  7. Bake for 1 hr or until brown and cooked through (give the toothpick test).
