Layered Acai Chia Pudding with vanilla chia seed pudding + acai berry smoothie + topped with even more superfoods! Recipe by Instagram's @healthybakesquinoacakes.

Ingredients

Chia Pudding Layer
  • 4 tablespoons of chia seeds
  • 1 cup of unsweetened almond milk
  • 1/4 teaspoon of pure vanilla extract
  • 1/4 teaspoon of salt
  • 1/2 tablespoon of agave
  Acai Layer
  • 2 Sambazon Unsweetened Acai Smoothie Packs
  • 1.5 cups of unsweetened almond milk
  • 1 cup of frozen mixed berries
  • 2 frozen bananas
  Suggestions to top with (or use your favorites!)
  • raw shredded coconut
  • blackberries
  • raw almonds
  • Cacao nibs

Chia Pudding Layer
  • 4 tablespoons of chia seeds
  • 1 cup of unsweetened almond milk
  • 1/4 teaspoon of pure vanilla extract
  • 1/4 teaspoon of salt
  • 1/2 tablespoon of agave
  Acai Layer
  • 2 Sambazon Unsweetened Acai Smoothie Packs
  • 1.5 cups of unsweetened almond milk
  • 1 cup of frozen mixed berries
  • 2 frozen bananas
  Suggestions to top with (or use your favorites!)
  • raw shredded coconut

Instructions

  1. Combine Chia Layer ingredients in a cup or jar and let it sit in your refrigerator. After 15 minutes take it out and stir it again then put it back in your fridge for an hour or two so that it can settle into pudding (can be done the night before)
  2. Blend Acai Layer ingredients and layer on top of chia pudding
  3. Top with toppings and scoop your way to superfood full-town
