Ingredients

Serves 4

  • 5 ounces Challah Bread (cut into 1 inch cubes)
  • 3-5 ounces bittersweet chocolate, finely chopped
  • ½ c Coconut Milk
  • ¾ c Sambazon Chocolate-Almond-Coconut Smoothie
  • 2 eggs
  • ¼ c Sucanat Sugar
  • Pinch Himalayan Sea Salt
  • ¼ - ½ tsp Peppermint Extract
  • Dash Vanilla

Serves 4

  • 5 ounces Challah Bread (cut into 1 inch cubes)
  • 3-5 ounces bittersweet chocolate, finely chopped
  • ½ c Coconut Milk
  • ¾ c Sambazon Chocolate-Almond-Coconut Smoothie
  • 2 eggs
  • ¼ c Sucanat Sugar
  • Pinch Himalayan Sea Salt
  • ¼ - ½ tsp Peppermint Extract
  • Dash Vanilla

Instructions

  1.  Prepare a 6x6x2 inch baking pan. Preheat oven to 325.
  2. In your baking pan, place cubed challah bread and allow to sit, uncovered, at room temperature.
  3. In a heavy bottomed sauce pan, combine: milk, Sambazon, and chocolate.  Gently heat, continuously stirring, until the chocolate melts.  Remove from heat.
  4. In a medium mixing bowl, beat eggs and sugar until well blended.  Add a pinch of salt, vanilla and peppermint extract.
  5. Temper the egg mixture by adding a small amount of the warm chocolate mix, gently whisking.  Gradually add the remainder of the chocolate to the egg mixture, continuously whisking.
  6. Pour the chocolate custard over the challah cubes in the baking pan.
  7. Gently squish down the challah cubes to soak up the custard mix.
  8. To bake, create a bain marie by placing the square baking dish inside a large pan inside the oven.  Fill the larger pan with water, about halfway up the sides of the square pan.
  9. Bake for about 30 minutes, or until the custard has set.
  10. Remove and allow to cool.  Serve warm with coconut vanilla bean ice cream and garnish with cacao nibs and a fresh sprig of mint.
