This Quinoa Salad with Acai Vinaigrette (or superfood taco) is perfect for Super Bowl or other get togethers where you want a healthier option to snack on while mixing and mingling.

Ingredients

Quinoa
  • 2 cups water
  • 1 cup quinoa
  • 1 tablespoon extra virigin olive oil
  • 1/2 t salt
Vegetables
  • 1 cup red bell pepper (1 medium)
  • 1/2 cup celery (2 stalks)
  • 1/2 cup carrot (1 large)
  • 1 cup cucumber (1/2 large)
  • 1/2 cup red cabbage (2-3 leaves)
  • 2 green onions
  • 1/4 cup fresh parsley
  • 1/4 cup fresh mint
  • 1 clove garlic
  • 1 head romaine lettuce
Acai Vinaigrette
  • 1/3 cup Sambazon Açaí The Original juice
  • 1/6 cup red wine vinegar
  • 1/4 teaspoon tumeric
  • 1/4 teaspoon ground mustard
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Acai Vinaigrette
  • 1/3 cup Sambazon Açaí The Original juice
  • 1/6 cup red wine vinegar
  • 1/4 teaspoon tumeric
  • 1/4 teaspoon ground mustard
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
 

Instructions

Can be prepared a day in advance then refrigerated and assembled the day just before service  
  1. Bring water to a boil with olive oil and salt
  2. Add quinoa, bring back to a boil, then reduce temperature to medium and cover
  3. Cook for about 10-15 minutes until water is absorbed, then let cool
  4. While quinoa is cooking and cooling, chop up all vegetables and herbs (except romaine lettuce)
  5. Once the quinoa is cool, toss with veggie mixture
  6. In separate bowl, whisk all vinaigrette ingredients except olive oil
  7. Then drizzle oil into acai mixture in thin stream as you whisk the mixture
  8. Season to taste with salt and pepper
  9. To serve, pile a few spoonfuls of quinoa salad into each romaine leaf then drizzle with vinaigrette
