Ingredients

  • 1 (2 lb) roasted butternut squash
  • 3 large garlic cloves
  • 1 tsp curry powder
  • 1/2 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1/8 tsp ground red pepper
  • 2 1/2 c low-sodium vegetable broth
  • 1/2 c hemp milk
  • 2 Sambazon Original Smoothie Packs
  • 1/4 tsp sea salt
To top:
  • 1 tbsp (per bow) Nutiva Coconut Manna
  • chopped cilantro

Ingredients

  • 1 (2 lb) roasted butternut squash

Instructions

To Roast Butternut Squash:
  1. Preheat oven to 375 F.
  2. With a fork, pierce squash several time around the whole thing.
  3. Place on a foiled baking sheet and cook for 20 minutes or until it become slightly soft.
  4. Remove from oven, cut in half length wise and remove seeds.
  5. Place back on baking sheet to roast (cut side up). Cook till soft, tender and slightly browned.
To make soup:
  1. In a cast iron skillet, toast cumin, coriander, and red pepper. It should take about one minute for the spices to get fragrant. Set aside for later use.
  2. When squash is done roasting, let cool slightly and peel by scooping flesh from the skin. Place pulp in a blender, add garlic and half of the vegetable broth. Blend till smooth.
  3. In a cast iron pot, combine squash mixture, remaining broth, milk, salt, and spices.
  4. Cook over medium heat stirring frequently.
  5. Once warm, add Sambazon Smoothie Packs. Continue to cook until warmed through and slightly thick.
  6. To serve, use earthy bowls and top with Nutiva Naturals Coconut Manna. Sprinkle with chopped cilantro.
