Strawberry Rhubarb Pie just like grandma used to make...except liquid and super healthy.

Ingredients

  • ½ c Strawberry-Rhubarb-Mint Compote*
  • ½ c Cooked Brown Rice**
  • ¾ c Coconut Milk
  • 1 Banana (frozen)
  • 1 Sambazon Original Smoothie Pack
  • Ginger to taste
  • Dash Vanilla
  • Pinch Cinnamon

Ingredients

  • ½ c Cooked Brown Rice**
  • ¾ c Coconut Milk
  • 1 Banana (frozen)
  • 1 Sambazon Original Smoothie Pack
  • Ginger to taste
  • Dash Vanilla
  • Pinch Cinnamon

Instructions

  1. Combine compote, rice, milk, banana and spices in your blender (we like Vitamix) and blend until combined.
  2. Add your Sambazon Original Smoothie Pack and continue to blend until everything's smooth. The rice, or other grain you choose, will take a fair bit of blending to really combine so start on slow and increase the speed until it's all good.
  3. Find a great looking glass and get at it.
  • A compote's essentially a sauté of chopped fruit. We diced fresh strawberries, made half moons of rhubarb, added some chunks of ginger, a few sprigs of chopped mint, a little agave, and cooked it over low heat with 1/8 inch water (stirring often), until everything cooked down. It firms up once cooled.
  • You can use a half cup of any plain cooked or soaked grain.
