Creamy vegan mashed sweet potatoes fit for a Spring feast.

Ingredients

  • 2 medium Yams, diced small
  • ½ medium Onion, diced small
  • 1 Tbsp Coconut Oil
  • Sea Salt to taste
  • 1 Sambazon Original Smoothie Pack
  • 2 Tbsp Honey (for vegan, swap agave syrup)
  • ¾ inch Ginger Root, peeled and diced thin
  • 1/4 - 1/2 cup Coconut Milk, as needed to blend

  • ¾ inch Ginger Root, peeled and diced thin
  • 1/4 - 1/2 cup Coconut Milk, as needed to blend

Instructions

  1. Over medium heat, sauté onions and diced potatoes in coconut oil.  Season with salt and cook covered, stirring every now and again so things don’t burn.
  2. Once al dente, add Sambazon and sliced ginger.  Keeping cooking until those potatoes get soft.
  3. Taste and add however much honey or agave equals however much sweetness you like (ie – a lot or a little).  Taste and re-season with salt if needed.
  4. Now the fun part: In your Vitamix, add cooked potatoes and about a quarter cup coconut milk to start.  Blend on low, slowly increasing speed, until potatoes become thick and creamy.  Add as much milk as needed to make them awesomely smooth.
  5. To serve, top with chopped fresh herbs of choice: tarragon, parsley or thyme win for top spring time picks.
