So many fresh vegetables packed into a tasty handheld taco-style masterpiece.

Ingredients

Serves 2
  • ½ ripe Avocado, sliced
  • Julienned Cucumber
  • Julienned Zucchini
  • Sprouts
  • White Bean Hummus*
  • 4 – 6 Collard Green Leaves, stems removed
  • 1 c Shredded Romaine Lettuce
  • Lime
  • Salt and Pepper

  • White Bean Hummus*
  • 4 – 6 Collard Green Leaves, stems removed
  • 1 c Shredded Romaine Lettuce
  • Lime
  • Salt and Pepper

Instructions

  1. De-stem collard leaves.
  2. Spread the bean dip in the center of the leaves.  Add a little romaine lettuce and sprouts.
  3. Add a few pieces of cucumber, zucchini and avocado.
  4. Roll up and eat like little burritos.
  5. Optional – dash of Bragg’s Liquid Amino Acids or a squeeze of lime, salt and pepper to taste.
